2) Oxygen: the reaction rate is higher the more oxygen there is, so you have to lower the level. The level of oxygen in a controlled and atmosphere is modified to between 2% and 4.5% maximum. Extremely low levels of oxygen increase the production of rotting crowns during storage.

3) Ethylene: this is a multiplying factor. Having more ethylene, there is more glucose and therefore an increase in the maturation process with even tiny amounts. To achieve a uniform ripening requires 0.2 mg / kg / day.

4) CO2: the normal concentration of CO2 is 0.3%, if CO2 is not controlled, stomata can be closed and smooth to the detriment of the quality of the fruit. For this problem the best solution is in the packaging to protect the fruit not only of CO2 (in the environment) but also from mechanical damage. The packaging may be a factor that maintains the quality or damage, "said Mr. Leiva.
